Fresh Vanilla Pod Cream Caramel

(Serve 6)

Ingredients:

120g caster sugar

3/4 cup water

3 cups milk

45g caster sugar

2 fresh whole vanilla pods

  (or 4 drops vanilla extract)

3 whole eggs, beaten

3 egg yolks lightly beaten

Dissolve sugar in the water and bring to the boil without stirring until a rich brown colour is achieved. Pour immediately into dry, hot individual moulds, or one single mould, allow to coat the base and sides, leave to cool. Heat the milk and sugar with the vanilla and pour onto the beaten eggs. Cool and strain. Pour into the prepared moulds, cover with greasproof paper or foil and cook in a water bath at 180'C for 30-45 munites or until firm. Leave to cool, refrigerate, then serve.
